MEXICO - CHIXACA MIXED DECAF - INSTANT COFFEE

STORY: This coffee is a blend of two Mexican coffees that were decaffeinated using two different methods! One used Sugarcane Ethyl Acetate method and the other used Swiss Water Process. The coffee blend is also from two different regions in Mexico: Oaxaca and Chiapas. Separately, the coffees were delicious and each could have stood on their own and I could have offered two different coffees. However, because I really liked something about each one individually, I decided to try them together and see what the synergistic effect would be. The blend was magic! It was both complex and sweet for a decaf coffee! Something you don’t often hear about or say regarding a decaf coffee. This decaf blend is definitely the best tasting decaf coffee I have ever tasted hands down! I know…..you’re thinking I’m blowing smoke, but give it a try and I promise YOU WILL NOT BE DISAPPOINTED. This would make an exceptional after-dinner pour-over or immaculate decaf espresso option! Of course, if you simply wanted it for drip, then go ahead and treat yourself cause you deserve it!
The Oaxacan component of the blend is from a growing region where the Sierra Madre del Sur coastal mountain range is peppered with small family farms, each consisting of just a few acres of land. Nearly forty percent of the producers are women who rely on coffee income to support their families. Producers here continue to identify with their indigenous roots using organic practices to manage their farms and protect their environment. They harvest cherries, then depulp, ferment, wash, and dry the coffee using their own micro-mills.
The Chiapas component is from the Members of Cooperativa Campesinos Ecológicos de la Sierra Madre de Chiapas (CESMACH). This coffee is certified fair trade and organic. The coffee was processed with a lot of attention to detail.
We roast and ship every Monday & Thursday. Orders must be received by 5 PM on Sunday and Wednesday to ensure it gets added to our production. Orders placed after 5 PM on Sunday and Wednesday will be roasted and shipped out the next production day.
