We roast and ship every Monday & Thursday. Orders must be received by 5 PM on Sunday and Wednesday to ensure it gets added to our production. Orders placed after 5 PM on Sunday and Wednesday will be roasted and shipped out the next production day.

Form Farm To Cup
Chiapas Mayan Harvest is sourced from 168 women-owned farms, each averaging five hectares in size, across various communities in the Bella Vista region of Chiapas, southern Mexico. Mayan Harvest is a green coffee exporter founded by Rosalba Cifuentes Tovia, who was raised in the Bella Vista coffee community.
Rosalba Cifuentes Tovia moved to the U.S. as a teenager and has lived here for decades, building a successful career and retiring before getting into coffee. As a child in Chiapas, coffee was a constant presence in her life. While she knew her region produced a lot of coffee, she was surprised to find that Mexican coffees were rarely featured on Third Wave menus when she discovered specialty coffee. Determined to change that, she set out to bring more attention to her home community.
For the past decade, Rosalba has worked tirelessly to help producers showcase their potential and secure better prices for their coffee. This lot is made up exclusively of women producers, which helps them earn higher premiums, reinvest in better agricultural practices, and improve their families' livelihoods. This is the first year the Mayan Harvest Women’s Group has exported coffee. With Mayan Harvest's system of traceability and the improved premiums returned directly to the women, this coffee recognizes their hard work and provides them with financial empowerment.
